I love making cakes and this one is my favourite... LEMON DRIZZLE CAKE!

2 eggs
4 tablespoons milk
175g self raising flour (sifted)
Grated zest from one lemon
Juice from the lemon
1 tablespoon icing sugar
175g butter
175g caster sugar

First you cream the butter together with the sugar, then gradually beat in the eggs and milk. Next gently fold in the flour with the lemon zest and a good squeeze of lemon juice. Pour the mixture into a greased loaf tin and bake until the cake turns golden brown (which should be about 50 minutes at gas mark 4 / electric 180c / fan 160c). Mix some lemon juice with the icing sugar to make a thin paste and spread it over the cake when it’s still warm. Leave it to cool completely.
